raspberry + mimosa



For Christmas this past year, the first gift under the tree was a box of fruity mixers that pair with alcohol to make cocktails, margaritas, you name it. My mother wrapped it herself, for herself. She told us she would act surprised when she opened it on Christmas day and then promptly handed us a list of alcohols she would need to pair with these mixers.

We bought her a collection of different drinks (Costco size, might I add), one of which was champagne. I promise my parents are not big drinkers in the slightest, but when she's craved a drink in the past we haven't had much available. Maybe I shouldn't be addressing alcohol as a part of a school project, but it's an integral part of this recipe and it was delicious.

Mom asked me to make her a mimosa, so I layered some orange juice on top of the champagne and poured the matching miniature bottle of mixer inside of it, making some sort of sunset drink, I'm not sure. The funny thing was, she complained that there was too much champagne and I had to go back and forth adding more and more orange juice until she could barely taste the alcohol. See? Told you she's not much of a drinker.

Anyways, I say all of this to lead into the inspiration for this doughnut. As I was pouring copious amounts of orange juice into a minuscule amount of champagne, I wondered if I could make a doughnut out of that. I looked at the fruit basket, we had tangerines. I looked in the fridge, we had raspberries. Obviously, we had the champagne. Let's make this into a doughnut.


This recipe uses the basic doughnut dough, found here.

for the glaze:
1/2 cup champagne
2 1/2 cups powdered sugar
1/4 cup chopped raspberries

Put the raspberries into a food processor and chop. Mix the champagne and powdered sugar together until smooth. Place the raspberries in the glaze mixture and mix until evenly incorporated.

for the drizzle:
1/2 cup orange juice
2 1/2 cups powdered sugar

Mix the orange juice and powdered sugar together until smooth.

for the topping:
1 cup raspberries
2 tangerines

Chop the raspberries and peeled tangerines to use for the topping on the doughnut.
