blueberries + lavender


Lavender. It's in your candles, air fresheners, soaps, essential oils, scrubs, lotions... I could go on and on. Its smell is soothing, comforting, calming and it's even said to be able to help you sleep! Lavender is a wonder flower. Did you know you can eat it?

Lavender has only recently been commonly used in cooking. It wasn't until the 1970s that a spice mixture including lavender was invented for wholesale. Lavender adds a floral, sweet note to the foods it is added to and it pairs well certain cheeses and fruits, especially blueberries.

As I've said before, my recipes are different from anything I've seen done with doughnuts before. I am constantly trying to think outside of the box and create something new and delicious. Lavender seemed like the perfect ingredient to experiment with and it turned out beautifully.

You'll definitely want to try these sweet & floral doughnuts. Here's the recipe!

This recipe uses the basic foundation dough, found here.

for the glaze:

1 cup blueberries
1 tsp lavender flavoring
1/4 cup milk
1/2 cup powdered sugar

Place the blueberries, lavender and milk into a food processor. Puree until well combined. Once pureed, pour it into separate bowl and sift the powdered sugar into the mixture. Whisk until smooth. You can always add more milk if it seems too thick for your liking.


for the drizzle:

1/2 tsp lavender flavoring
1/2 cup powdered sugar
2 tsp milk

Mix all ingredients together until smooth. Transfer the mixture into a pastry bag. Snip a small portion of the end off of the bag.

for the assembly:

Dip your doughnut tops into the glaze and place onto a cooling rack with a pan or paper towels underneath to catch the drippings. Let the glaze solidify a bit and then dip again if you would like the glaze to be thicker. Take the pastry bag with a small bit of the end cut off and quickly motion back and forth while squeezing lightly, lightly coating the doughnut in the lavender drizzle. Eat the doughnuts soon after making them, they don't do very well sitting overnight!
