This project gave me the opportunity to finally use a fruit I'd been curious about for a long time. Pomegranates always seemed interesting because they were unlike any sort of fruit I'd eaten before. I learned a couple of things when I bought my pomegranates... 1. How to open the darn thing 2. How to use the seeds in cooking. Once I figured these things out, I was on my way to a delicious and decadent doughnut.
The recipe is simple: dark chocolate and pomegranates. I wasn't sure about getting too adventurous with an ingredient I wasn't totally familiar with and chocolate is a tried & true favorite. Plus, who doesn't love fruit and chocolate? It seemed like a guaranteed success, and it was.
This recipe is extremely simple and easy to recreate! Here's the recipe:

This recipe uses the basic doughnut foundation dough.
for the glaze:
1/2 cup pomegranate seeds
1 1/2 cups powdered sugar
Place the pomegranate seeds into a food processor and pureeuntil there is a good amount of juice available. Take a bowl, place underneath a strainer and pour the puree into the strainer. Push the pulp until you've gotten a good amount of juice out of the pulp. Mix the strained juice with powdered sugar and whisk until smooth. Set aside for dipping later.
for the drizzle:
3/4 cup dark chocolate chips
1/4 cup heavy cream
Pour the chocolate chips and heavy cream into a microwavable bowl. Microwave on high for 30 seconds at a time, mixing in between, until smooth. Transfer to a pastry bag, cut a small part of the end off and drizzle as much or as little as you prefer.for the garnish:
1 cup of pomegranate seeds
Use the seeds to garnish the doughnut by sprinkling them on top.
